Añejo tequila, which has been aged the longest and is also generally the most expensive, is more like an aged whisky - it has a very smooth taste, takes on more of the flavor of the wood from the barrels it ages in than of the original agave, but still preserves a distinctive tequila flavor that separates it from other aged spirits.
